*DRESSING
1/4 CUP MAYONNAISE
PLAIN YOGURT OR SOUR CREAM 1/4 CUP
1 TABLESPOON LIME JUICE
1/2 TEASPOON CHIPOTLE CHILI POWDER
CLOVE GARLIC/ 1 MINCED
CRUMBLED COTIJA CHEESE/ 1/4 CUP
CHOPPED FRESH CILANTRO 1/4 CUP
*SALAD
VEGETABLE OIL /1 TABLESPOON
FROZEN CORN 1 PACKAGE (16 OUNCES)
1/4 TEASPOON SALT
LARGE ADVOCADO, 1 DICED
TEASPOON 1/LIME JUICE
1 CAN BLACK BEANS RINSED AND DRAINED (ABOUT 15 OUNCES)
2 MEDIUM TOMATOES, SEEDED AND DICED
1/2 CUP FINELY CHOPPED RED ONION
TORTILLA CHIPS
CHOPPED LETTUCE
CONTINUED TUESDAY TACOS
For dressing whisk mayonnaise, yogurt, 1 tablespoon lime juice, chili powder and garlic in small bowl. Stir in cheese and cilantro.

For salad, heat oil in large skillet over high heat. Add corn: cook 10 to 15 minutes, or until lightly browned, stirring occasionally. Stir in salt. Transfer to medium bowl ; cool to room temperature. Toss advocado with 1 teaspoon lime juice in small bowl.
Into each 1 quart jar, layer 2 1/2 tablespoons dressing, 1/2cup corn, scant 1/2 cup black beans, 1/4 cup tomatoes, 2 tablespoons red onion and about 1/4cup avocado. Top with tortilla strips and lettuce. Seal jars. Refrigerate until ready to serve. Enjoy with your date night, Taco Tuesday.
