First, I’m so excited as I continue this Meatless Monday Plant-Based diet journey. I must say, more fruits and vegetables are certainly part of my kitchen makeup these days. Shopping more for healthier meal selections and eating out less is becoming a routine.

THIS RECIPES IS AS FOLLOW; TOFU “FRIED RICE” MEATLESS MONDAY
MAKES 1 SERVING
2 OUNCES EXTRA FIRM TOFU
1/4 CUP FINELY CHOPPED BROCCOLI
1/4 CUP THAWED FROZEN SHELLED EDAMAME
1/3 CUP COOKED BROWN RICE
1 TABLESPOON CHOPPED GREEN ONION
1/2 TEASPOON LOW-SODIUM SOY SAUCE
GARLIC POWDER 1/8 TEASPOON
SESAME OIL 1/8 TEASPOON
1/8 TEASPOON SRIRACHA OR HOT CHILI SAUCE ( OPTIONAL)
MICROWAVE DIRECTIONS;
- Press tofu between paper towels to remove excess water. cut into 1/2-inch cubes
- Combine tofu, broccoli, edamame in a large microwavable mug, mix well. Microwave on High 1 minute
- Stir in rice, green onion, soy sauce, garlic powder, oil and sriracha, if desired. Microwave 1 minute or until heated thorough. Stir well before serving.
SLOPPY JOES MEATLESS RECIPE
MAKES 4 SERVINGS
2 CUPS THINLY SLICED ONIONS
CUPS CHOPPED GREEN BELL PEPPERS /2 CUPS
CLOVES GARLIC, FINELY CHOPPED/2 CLOVES
KETCHUP/2 TABLESPOONS
1 TABLESPOON OF YELLOW MUSTARD
CAN (ABOUT 15 OUNCES) KIDNEY BEANS, RINSED, DRAINED AND MASHED/ 1 CAN
CAN ( 8 OUNCES) TOMATOE SAUCE/ 1 CAN
CHILI POWDER/1 TEASPOON
1 TABLESPOON CIDER VINEGAR
4 SANDWICH ROLLS
SPRAY LARGE NONSTICK SKILLET,COOKING SPRAY; HEAT OVER MEDIUM HEAT. ADD ONIONS,BELL PEPPER,AND GARLIC: COOK AND STIR 5 MINUTES OR UNTIL VEGETABLES ARE TENDER. STIR IN KETCHEP AND MUSTARD.
ADD BEANS,TOMATOE SAUCE AND CHILI POWDER. REDUCE HEAT TO MEDIUM-LOW. COOK 5 MINUTES OR UNTIL THICKENED,STIRRING FREQUENTLY. STIR IN VINEGAR. SERVE ON SANDWICH ROLLS.
